Breakfast

I was excited to see Mark Bittman defend unusual savory breakfasts (with a focus on whole-grain based breakfasts) in this week’s Minimalist column because one of my all-time favorite breakfasts is an unusual black bean and rice dish that has always gotten me mocked by my friends who have seen me make it.

I got the breakfast from some VH-1 show (ugh) about celebrity eating habits or something like that (ugh) where Moby (UGH) showed how to make his favorite vegan breakfast. (I should mention I was 17 and vegan at the time.) The dish is simple: cook onions and garlic in a pan, then add tomatoes. Cook until tomatoes lose liquid and then add a can of black beans and top with broccoli. Cook until broccoli gets a deep green color and serve warm over basmati rice. I usually split this meal up over a couple of days, but I should mention that when you reheat this particular breakfast it will smell like the stankiest puppy farts that have ever infected your nostrils. But it is still delicious.
